Whomever is looking at this post must have liked the macaroons that I baked for the cookie exchange at Bobbi's. Here is the recipe. Easy to make and delicious. It was given to me by a retired Canada Post employee.
1/2 cup of milk
1/2 cup butter
2 cups of white sugar
8 level tablespoons of cocoa
pinch salt
Blend sugar and cocoa or sift together to avoid lumps.
In saucepan, at butter, while melting add milk. Add pinch of salt.
Add the blended sugar and cocoa and bring to rolling boil. remove from heat.
Add 3 cups...or more regular rolled large flake oats and 1 cup shredded coconut and stir.
Stir well then drop by teaspoons onto waxed paper until firm. I put mine in fridge to harden for about 1/2hour. Makes about 32 cookies depending on size.
